I've worked a couple 70-80+ hr weeks in a row during menu changes at pic related. But we changed the menu like...4 times a year minimum. so it wasn't too terrible. Also I befriended the baristas and would trade food for espresso so that was helpful.

Im actually out of the industry, but ive worked at many nice restaurants and unless theyre owned by s restaurant group, they dont have that kind of cash to blow on labor.
