I use it as a soup base. Roast the pumpkin pieces then puree them. The puree can be frozen and saved for later. You can add spices and other ingredients for pumpkin soup/stew. The pumpkin makes everything a bit creamy and gives it a nice taste.

It's fairly simple. Pan-fry some onions and garlic and beef cubes and spices (and other vegetables/potatoes if you want), heat up pumpkin soup base and add some heavy cream to give it texture, add in spices and salt, then add the fried stuff into the soup, allowing it to simmer for a while (but not boil, since you don't want it to burn).

Well, there is a lot of variety in hard winter squash gourds.

Your picture is a breed that grows large and fast, and even on both sides, and devoid of those warts, the jack-o-lantern large pumpkins like that are in fact edible, but why would you eat them? They're for decor, and one cut they rot. They have really nice seeds and that's their use, really. There are many other colors with cute warts and shapes also meant for autumn decor uses.
The best "eating squash" are other varieties and each has their best use, from small sugar pumpkins (best for pie) to butternut squash to acorns and zucchini, to some latin world popular ones for soups like ajiaco.

I use the big cheap pumpkins most of the time. One large pumpkin after roasting and pureeing can produce several large bags full of soup stock, which can be frozen and used up to several months later.

I've got these little Japanese ones that are delicious. Sometimes I cut them in half, fill with apples/butter/cinnamon and roast. Some varieties are too stringy and weird for me.

Pumpkin's great mashed. You don't use carving pumpkins, though. You use smaller sugar pumpkins, which are better tasting. Just gut them and cut them in half, roast them in the oven with some oil until they're soft, scoop out the flesh and mash it with butter, cinnamon and nutmeg. Great side dish.

You can also turn them into soup, dips, stew. They're pretty much good for anything. I prefer pumpkin to most kinds of squash.

Kabocha has a strong enough taste to stand on its own as a side. Cinderella pumkins seem to carry much more moisture and make much nicer textures of pie/bread. Used a fairytale pumpkin for a soup base this week that turned out great.

Try roasting up whatever is available locally, the different sorts do bring significantly different tastes and textures
