I bought 6 lbs of Roma tomatoes, seeded them, roasted them with olive oil, salt and pepper, (~325 F) for about 3 hours and then packed them in extra virgin olive oil. I was left with just under a 1 quart. Packed them in a mason jar and stuck it in the fridge. Looks good OP.

for every 2 pounds of washed and seeded chopped tomatoes:
chop 1 onion, 1-2 jalapenos/ peppers and some cilantro and salt
125ml of bottled lime juice
bring to a boil
simmer for 3 minutes
put in 250-500ml mason jars leaving 2cm headspace
boil water process for 15 minutes
