I'm trying to limit my meat consumption to one meal a day.

What are some good vegetarian dishes to incorporate into my diet? Bonus points if it includes spinach.

Thug Kitchen has a couple of books with decent recipes in 'em. If you can stand 'how do you do, fellow hoodrats' way they phrase everything, anyway. I've had more luck with their 101 book than the first one but either is probably fine.

A lot of Indian dishes are veg, and you can put spinach into any curry you like. Dal (red lentil) dishes are cheap af.
