This evolution of the Chalupa chart could be better, the original Chalupa came in multiple different flavors, including Baja and Nacho Cheese as well as others

Baja was great.
You can still get an approximation by ordering them fresco-style and adding the spicy ranch sauce.
It's not perfect, but it's the closest you can do with the modern menu.
