Which part? I don't think anything I said there is particularly outrageous. He started off as a guy that liked food, managed to get successful enough that he's turned it into a career, he doesn't have the same experience as a professional chef has but definitely has all sorts of unique insights into the industry that others don't have. Basically as far as you can get as an amateur chef.
