I don't like pancake mix. Except this one. It actually makes nice pancakes and can be improved a bit by adding an egg or two.

A friend of mine in the US suggested I try it, you can't get it in Western Canada, so I got some. It does what it says on the box, and it's quite good at it too.

Your typical buttermilk mix, but instead of adding any kind of water you add a beer that has been left out overnight. It creates a very fluffy and soft pancake.

Those aint pancakes in your pic, but ill give you the recipe like my grandma does them.
2 cups of flour
3 eggs
a splash of oil
a pinch of salt
1 cup of milk
a tiny bit of sugar (you dont need that much since you usually have somehing sweet to go along with it)
mix it all together
heat 2 cups of milk to the point where it starts rising in the pot (watch out that it doesnt overflow the pot, burned milk is a bitch to clean up) and add the milk after you mixed everything together previously, dont put all the milk in there at once so its easier to stir it together.
And there you have it, your pancake recipe.
I like to make myself a dip where I use schmand (I think its called sour cream in english), put a bit of sugar in there and milk in addition to get the creamyness/consistency I want
