It's the salty saltwater of the ocean that makes most shellfish so tasty and meaty.
Try crawfish sometime if you want to see what water bugs taste like when they aren't living in saltwater. Spoilers: gamey, little meat, and not salty at all.
Even if we could science-fuck giant coconut-crab-size land bugs into existence that were big enough to eat in decent portions without the exoskeleton getting ground up in it, the insides just aren't the same. When you break open a big land bug's limbs, it's just fucking goop and some tendons. The exoskeleton is pretty much the only solid thing holding everything together, there's nothing even in there to cook. That's why most edible land insects today are either cooked/eaten whole or ground into a revolting calcium powder.

I'll eat the bugs Shekelberg, but only if they're the kind that live in the ocean and are comprised of at least 50% solid meat.
