Because kitchens will hire anyone. ANYONE. Arrest record? Hired. Drugs? Hired. No one cares, just don't touch the houses cash or the GM's blow.

Then, there is the small but not insignifigant chance of making it good. You mind find a good chef who mentors your or looks after you. It's not unusual for crews to outright follow chefs around, or at least one or two people they know are competent. You can also claw your way up the ranks if you aren't incompetent - turnover is high at every level, and if you can't get opportunity where you at you probably can somewhere else once you've made your bones.

Finally, it can be a huge rush. During your shift you're basically wired, and when you pull through a service you can be proud of yourself.

It's simultaneously the best and worst job to work. Horrible hours, routiniely have to work off days, hard work, terrible pay for the work you put in, dealing with the retards who work front of house, the inevitable burn/cut scars all over your hands and arms. But you will typically work with some of the most interesting, down to earth people you'll ever meet. I've worked with felons, ex-musicians, ex pro skateboarders, drug dealers, illegal immigrants, travellers, just people with a fuck ton of stories and they usually some good hookups for weed, coke, speed, anything really. And the sense of comradery you have with each other as you get through and finish a busy shift is amazing. It's a huge fucking rush, no other way to describe it.

If you're still around the Seattle area you should go back for a few shifts after all this shit blows over. Max is a good guy. I don't have to tell you he's a monster cook. I can't speak about his business side though. Looks like Eden Hill is still open so it can't be doing all that terribly all things considered. That Queen Anne area isn't exactly cheap (comparatively). Shit, I should go visit him. I'd stage for a few days just to get back into the groove we had.

Here's another quick Max story: when he was coming up with Lick the Bowl, we stayed up until about 3 or 4 am prepping for our little area at the ACL VIP tent (free food/drinks for those with a VIP badge and the workers for said tent area). So prepping apps for about 400+ people. We made fried pig's brain meatballs (destroyed the oil in single fryer we set up) and had to resort to the VIP guests smearing the foie batter themselves on some shitty crackers our awful pastry chef made. She (the pastry chef) purposefully didn't perforate the crackers so they fell apart as the guests dipped them into the foie. Awful "service". The owner of the restaurant all fat, bald, drunk and sweaty and god damn hovering. Guests just slathering their plates with the foie batter so we started to run low pretty early on. Trash times as far as food output was concerned.

Anyway, the pastry chef got yelled at and then some by Max (few times he was ever visibly angry in my presence at least) and she cried and begged to not be fired. She ended up quitting a week later anyway. I really wanted to bang her. Petite little red head (pic somewhat related, she wasn't jewwy looking).

So a single mom can sort of live a normal life working as a waitress and men usually are in similar positions. Its also piss easy to do while you are going to school. I personally started in fast food and worked that for two years. I moved on to restaurant for better pay. I am working on improving my life and saving money for just whatever. not OP but i live in a culinary scene that has been able to turn into a promenade and the architecture has retractable roofs so the restaraunts in the rona-makeshift promenade have been doing extremely well since the ones outside the streets they shut down for the rona promenade have all been closing. been really great for work, ive been able to just walk in to any restaurant demand my pay and a position because theyre all hurting for employees. been helpful as fuck for my career and building my resume. worked my way into a sous position within two months at a fine dining place across the street from the place i was doing prep chefing. its an employees market rn

when i got out of high school i started to work in a japanese ramen joint to practice my japanese, so for me it was basically like getting paid to learn japanese which i would be doing anyway. the pay was trash and the job was exhausting but it was a lot of fun especially when you're completely swamped with orders and you, miraculously, pull through. sitting down for a staff meal after a dinner rush akin to hell was one of the most rewarding feelings i've experienced after getting out of school. met a lot of interesting people as well, smoking weed and drinking asahi with your buddy after work was really fun. i miss those guys

Go back to school, or get a GED. Find something you enjoy doing and gets you paid. Be ambitious, set 5 year and 10 year goals for yourself. Get educated, all the resources and knowledge are at your fingertips.
If you enjoy the food service thing and plan on staying in it, you don't wanna be a bottom feeder. forever. Specialize in something and get fucking good at it. Sometimes a diploma or certification will help you get more cash and some sense of accomplishment.
