Because it grows like a weed, requires zero effort to farm.
They are quite nice to make stock with, just slice them in quarters and simmer carefully with your other veggies of choice. Gives an unusal sweetness.

Wilderness survival. People who had to find sources of food to survive found that young shoots and the soft portions inside plants are good for eating. There are lots of other plants that have the same issue: majority inedible except for the heart.
