I know how to cook basmati rice (rice:water = 1:1.2) because I grew up with it. Now I'm trying to make Japonica (nishiki) rice and honestly I'm just lost thanks to online contradictions

What the fuck is the water ratio so this shit isn't gloopy or dry? I just want nice, fluffy, plain rice. And don't even start with "just use your finger" - fingers are different lengths and rice cookers are different sizes so that's bullshit, especially with only 1 cup of rice.

I basically figured this out via trial and error ages ago.

Wash rice 3-5 times
1.1 parts water per part rice by volume
High heat until it starts to boil, then turn the heat all the way down.
Let cook 10 minutes.
Take off the stove and let steam 10 more minutes.
Done.

Have never had this fail in 10+ years, and I have weeb rice at least once or twice a week. I've made this for actual Japanese people and they seemed impressed, too, although I think that's mostly because making rice without a rice cooker is some sort of lost art over there.

Wash 5 times (cold water), season the rice (salt, pepper, optionally cardamom, star anise), add 1:1.5 rice to water, lid on, bring to boil, lower to gentle simmer, leave for 13 minutes, then turn off completely and let sit covered for a couple of minutes.
This is the way I have learned to make really nice rice even from cheapest garbage rice. But then again, I’m from central Europe and we eat rice one per 10 years and if it isn’t fucking raw in the middle it’s already better than 99% of rice made here.

stovetop rice. fuck the rice cookers. get a medium size pot with a fitting lid.
wash your rice in cold water until it runs off clear.
for short grain rice use the ratio 1 cup of rice to 1 and a quarter cups of water. combine in the pot. set on max heat uncovered. when it just begins to simmer, put the lid on and drop the heat to about 2 out of 10 and set a timer for 20 minutes. after the timer goes off, turn the heat off and set a timer for 10 minutes. do not remove the lid until the second timer is up.
after the timer goes off, remove the lid and fluff the rice with a paddle or a fork. chefs kiss

The OP is talking about a japonica rice called Nishiki.
Change the moisture content from 1:1 to 1:3, depending on the variety and storage conditions.
After boiling, mix to prevent clumping, then adjust the heat without opening the lid.
From here, it's different for everyone, but for me, it's the sound and the amount of steam that confirms completion.
