Honestly, the first one I made a few months back was the best. I used more butter than was probably necessary, lots of good cheddar and a second cheese I don't even remember (maybe monterrey jack?), and a dash of ground black pepper. I also fried it in a bit of oil, per advice from here.

I usually head to Tasmania and use slabs of non-Tasmanian cheese in very thick bread (important). If you nuke it in a roaring fireplace you can get your bread to the right blackness while still retaining the cold solidity of your cheese blocks. That's how to make the most amazing grilled cheese, it'll have you wanting to move to Tasmania.

Sometimes I like to cook mine so by the time the bread is brown the cheese inside is just warm and soft but not completely melted. Or I'll just cook the cheese right in the pan until it gets a bit brown which tastes good too then put it on toasted bread, but you have to let the cheese cool down a bit if you do that or else it's too runny. Putting a tiny bit of cheese on the outside of the bread can be good too, gets crispy and adds a nice flavor.

Make sure you have something acidic with it too to balance out the fat, tomato soup is common but I also like to just dip it in mustard or sometimes add pickles.

I prefer cheese on toast. My ultimate cheese on toast involves onions, garlic and oregano. First I toast the bread so that its really dark brown and crunchy. Then I lay down some slices of raw onion and garlic. Top that with several thin slices of cheddar. Much better than a a couple of thick slices. Then sprinkle over oregano and splash down some Worcesteshire sauce. Under thr grill until the cheese is violently bubbling. Cut into squares and enjoy with some brown sauce and a cup of tea.

This is a personal choice, but I love to cook up some onions with garlic in the same pan I use to cook grill the break. The onions are delicious in the sandwich and I think it helps to add more flavour to the bread to cook them together.

My go-to will always be sharp cheddar and smoked gouda on sourdough. If I feel like doing something stupid I'll make mac n' cheese grilled cheese. It's work but fuck is it worth it.

I buy store brand sliced cheese and grill it with diced onions and chillis, and some sliced tomato, add salt and pepper, chilli flakes, and oil. Then I paste it with siracha and drink it down with fruit punch.

Start with sourdough and some nice salted butter then add muenster and colby. Grill that fucker low and slow for maximum crispyness. Then turn up the heat and sprinkle some shredded sharp cheddar on top and flip ones it melts enough to stick. Repeat on the other side. You're done once the cheddar on the outside is crispy.
