The shrimp oil from this is, without a doubt, extremely flavourful. But what to do with the leftover shrimp heads? You grind them up and store them as Shrimp Paste (Shrimp Miso). Use it as condiments (pour hot oil on top) or starter paste like doubanjiang, tomato, etc.
Can also be used in XO Sauce.

Your prized product will be better than any store bought shrimp flavourings, and I'm not joking. I bought Youki's Shrimp MSG and it was FUCKING SALTY with very mild shrimp taste. MAKE YOUR OWN SHRIMP OIL AND PASTE.

Oil, preferably lard
Shrimp heads/shells
Medium heat until the oil is clear and shrimp heads aren't charcoal.
Strain => Shrimp Oil
Put shrimp shells into blender and go ham. Do in batches please => Shrimp Paste (Miso)
any other aromatic entirely is optional. Garlic, onion, green onions, pepers, star anise, cinnamon, etc.
