Dad's recipe which is his mother's, but I've applied my own little twist on it.

Used 2 quarts of chicken stock, but I diluted it with like 6 cups of water since stock is very strong and I wanted more broth. Put it on low heat, chop carrot, white onion, garlic, celery, fresh dill, and russet potato (32ths).

I don't like skin on my chicken for soup, it's gross since it's been boiled, but it is however delicious when roasted. So I just remove as much of it as possible, bone in thighs btw, then lightly grease a pan with oil, brown both sides for 5 minutes, then put in pot and leave it for an hour, stirring occasionally/skimming fat/foam.

Come back, put a pat of butter in that same pan you browned the chicken in and put in all the vegetables except the potato and dill, turn burner to low, don't wanna cook them, do that for 20 minutes, stirring occasionally. Dump it in the pot (potato included) but before that, take the thighs out first, it'll be a life saver later on. Cook for another hour.

After 2nd hour, dump in dill, kill the heat, and let cool for half an hour. Once half hour is up start boiling whatever noodles you want, as is tradition in my family, I used egg because I'm a filthy joo. While the smaller pot of water is boiling, remove chicken thighs and use forks to shred it, then dump it back in.

Consume. And yeah this is just a long winded version of what>>14734031 just said. The things I do my father/grandmother didn't was the browning of the chicken, cooking the vegetables on low heat, and the potato. Did the first 2 for extra flavor, and potato to help stretch it out,

Yeah I take a wooden spoon or similar utensil and try to scrap all the fond off of the pan so after the vegetables are done, it along with the chicken grease put back into the pot. I'm not entirely sure if it directly increases the flavor, since I haven't done a batch where I didn't try that but I assume it does since fond is tasty.

Zip sauce is kind of like au jus but its combination of wine and mushroom soy sauce that you mix with a fat like butter, drippings, or coconut if you dont like salt. Usually steakhouses have it if youre every around to try it but they sell bottled versions in grocery stores in the states.
