It's mostly true with certain dishes. Maybe 95 percent is an exaggeration, but a majority of Chinese buffets use the same damn frozen bags of breaded beef for their ginger beef or whatever sugary sauce they decide to dump over cheap cuts of meat at their particular establishment. I've seen places literally cut up old chicken fingers from their rotating buffet, soak it in an orange or yellow sauce and call it the lemon/orange chicken special.

I guess my point is if you want good chinese food in the west, avoid buffets. Go to dim sum places full of asians. I guess it helps to have a chinese friend who can order off the real menu for you.
