Is there any reason I can't just chop these up and throw them in a freezer bag for storage? A lot of how-tos online say you should blanch and then cold shock them, but is that really necessary? For what it's worth, I only plan to store them for 2 weeks or so at most, not super long term.

Should be fine as long as your freezer is actually cold. The faster they freeze the less damage the formation of ice crystals does to the cells of the fruit.

Thats really just to preserve color. If you dgaf about color, then yeah. But it should be mentioned that any fruit or veg with a high water content is fucked by freezing. These don't fit it, but texture will still be mushy a bit.
