What is /ck/'s tips for the best bolognese?
We all know the basics: start with onion, carrot, and celery, then add meat, the wine and then tomatoes with a long simmer. What's your twist to make it better?
Garlic? Herbs? Red vs white wine? Milk or no milk? Meme shit like nutmeg and sugar?

The tomatoes and ground beef friend, use red ripe tomatoes and if you really want to splurge, add sausage or some type of pork grease or better a little bit of ground fatty pork, but just don't over 20% ground pork to ground beef.

half beef half pork
brown the meat first and remove
add garlic and tomato paste after the mirepoix, paste really helps
home made stock, i prefer chicken because its the most convenient to make and is usable in more dishes, but beef stock would be awesome
i generally simmer with rosemary or thyme
lots of black pepper

I've been crazy about making ragout, kinda the same. Its so deliciousz

Fry meat, remove
Fry mirepoix, add some good bacon, fry fry
Add tomato paste and fry that off
Add meat back
Pour in some redwine, let it evap for a bit
Add in about 50/50 full fat milk and stock
Wait hours, if you like, continue adding full fat milk and stock and let it boil down.

Do meat first, and cook the veggies in the meat fat, deglaze fond with wine of choice. Make sure to salt the meat and the veggies so you don't have bland shit in salty sauce. Garlic is always good. Add some kind of fresh herb at the end. Chopped basil is good.
