Yeah it seems from the responses that my best bets are a meat marinade, beer cheese sauce, beer brats, beer batter fried foods, and pulled pork/ribs. That'll help me with at least a couple of beers over the next week or so, and they all sound delicious.

After a party, I am sometimes left with some pumpkin or seasonal brew someone brought, that is like bleh for drinking so I try to cook with it. But, frankly, the more milder beers make the better beer bread!

The recipe I've been using all these years came from Robin Miller on FN.
2 1/4 cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Combine, preheat oven to 400, spray a loaf pan. Add your wet ingredients to the dry ingredients, when the oven is ready to go.
12 ounces lager beer
2 tablespoons olive oil
Bake ~45 mins.
The olive oil gives it a lovely golden crust and the carbonation lifts the loaf right to the top of the pan.
I love a orange zest honey compound butter if I'm craving something sweet with it, but otherwise beer bread is my go to side when I make chili or a slow simmered beef stew on cooler nights.

I also love a welsh rarebit (puffy two fat ladies style is worth a try), and for a latenight mood when I have some good bread in the house it can't be beat. It and beer cheese dip shine the most with the more mundane lager as well. Dip some of those frozen Aldi bake-at-home soft pretzel sticks into the beer dip.

There isn't enough flavor to bother using it over other alcohols when cooking. I guess beer batter is about it, but even that winds up being better with a dark ale like anything else you'd use cooking beer for.

Marinate a chicken in some beer. It'll be really tender. Use some beer in a batter to deep fry vegetables or fish. You can even use beer to bake with. It's very nice for a dark chocolate cake.
