I did make them from scratch, even the dough since it's not sold in my country.

I'm not vegetarian anymore. I just don't eat meat on Fridays, and that's when I'll serve them.

They are in the freezer, by the way.

I make mine with a combination of:
>mung bean sprouts
>cabbage
>shredded carrots
>shredded pumpkin
>shredded chayote
>shredded green papaya
Wrap then fry 'em up, and serve with a sweet and spicy sauce.

no no anon im sure you made these from scratch. fresh spring rolls are completely different though. they arent fried, its like 4 different herbs, bean sprouts, lettuce or cabbage in a deliciously chewy rice paper wrap dipped in a sweet and savory sauce. not that fried spring rolls arent incredible too, but if you havent made fresh ones you gotta take a wack at em. theyre incredibly refreshing. its usually shrimp or braised pork inside if you choose to add meat but you dont have to.

yes, plus the ingredients are a bit different albeit in the same vain. you soak the papers in warm water for a few seconds and they turn into these soft sticky chewy wraps and its so good. plus it has rice noodles inside which are imo the best noodle texture in the world. I could write a loveletter to fresh spring rolls theyre so underappreciated. one of the first foods that showed me a 90% veggie dish could be good and broke me out of my childlike disdain for veggies

OP here.

Well, I give my spring rolls a 4/10.

>The pastry was not as crispy as I used to get in the Chinese place
>I fucked up by blanching the cabbage before, thinking it would help remove some moisture, and it did, but the cabbage wasn't as crunchy as I was used to
>Consequently, some rolls busted open as I was frying them

It was okay in terms of taste, although I didn't put salt enough.

Next time I will not blanch anything, and try a different dough recipe, maybe the ones you cook the sheets on a pan for a few seconds after rolling them, because I didn't do that.
