You make no mention of what steps you take to make these. In case you didn't know, here is a protip: boil your wedges/chunks for about five minutes in heavily salted water before coating with oil and spices. Some prefer to add a bit of baking soda. Extra steps suck, but this one is fucking worth it, the improvement in roasted potato crispness and browning is large.

Before of course. I chunk up the wedges, then throw the raw potato right into a pot of water for the parboil. This stops way short of fully cooking the potato, but gives it a head start and softens up the surface. The cell walls get fucked up on the surface leaving what looks like a thin layer of mashed potato. Thats the part that will get crunchy, brown and delicious in the oven, its almost like they are battered and fried.

This is true, that pan is shit and its limiting how good your results can be. Get an aluminum half sheet pan, preferably with a silicone baking mat. The investment is worth it and your cleanup will be easier.

I love the skins. And the do indeed crisp properly when you do it correctly.
Cut your wedges so you have two flat sided surfaces of exposed potato, and the skin side retains the curvature of the potato. When you roast them, start with one of the cut sides down so it browns. When you flip them, the other cut side goes down. Now its browned all around with the delicious skin also crisped up.
