I like the people I've met from flyover country, although a bit naive they're good people, I'd imagine it would be easier for someone from the big nose tribe to fleece and take advantage of some flyovers compared to the street wise coasties.

You want out of Dane county.
Yes, it's full of damn dirty hippies, which may be kindred spirits to your homesteading goals, but it will be easier to get a chunk of land if you aren't in the Madison-Milwaukee to Illinois belt.
Door county is too touristy to be affordable; too many Chicagoans immigrate for the weekend. Dells area has the same problem, but only in peak summer.

If you're modestly hung up on being "close" to Madison, Green county is quite lovely and still inside the margin. Go west of Monroe. Same for most of Iowa county.

Lots of lovely space up just north of Portage (Columbia county).

Extended family has homesteaded variously around Richland county (good), Jefferson county (hard), Jackson county (hope you like the Ho Chunk; lots of deer and fish, tilling the land may be a challenge).
Tomah and Necedah are kind of the heart of the cranberry belt. Plover is potato central; should be the time of year to get 50lb sacks for $10 (It is common enough to go get 800lbs and stick them in the cellar that the guy doesn't even look at you funny, and he'll still carry them all to your truck); Lincoln/Marathon county seems to be the ginseng belt (but expect 15+ years of work before you sell the cash crop, and you need a stupid long rotation cycle).
