I just get a giant can of black beans from my local ethnic supermarket, a big white onion, a garlic bulb, some carrots, canned tomatoes and a fuckton of spices. Then grate some chedder of the top when it's done. Shouldn't be complicated.

Beef AND pork/chicken. You need at least two kinds of meat. Some onions in the pot are alright but they are better topping it uncooked. Cheddar is the go to cheese but you should really be using a blend

I love smoked meat in my chili, so I use leftover brisket or smoked chuck. Plus hot sausage, poblano peppers, onion, some smoked chipotles in adobo and a couple cans of rotel.
