I go with rice and beans + something else almost every week. rice and beans are easy to make and you can season them in a 1000 diferents ways. Normally I put a tird dish in there as well, usually meat.

But it too gets repetitive overtime.

never do this. I did meal prep once with stuff like zuchnni and shit and it just made the container a liquidly mess especially if you remicro it. Personally I just cook meat and some items ahead of time while saving stuff like veggies to the last minute.

I like to buy bulk packs of chicken leg quarters and grill them all up at once. I'll do the same if I see pork chops or pork steaks on sale. It's not classy, but there's nothing wrong with slinging them into ziplock baggies and tossing them into your fridge for you to reach in and snag one or two for a meal later on. I'll also make bulk salads with things I really like and I know I'll eat and put them into individual containers so no matter what, I've always got something "healthy" to fill my stomach with.

If you wanna get even more crazy, you can boil a dozen eggs and put them back into the fridge so you have breakfast and/or protein snack available. If you've got a good blender, I also suggest making yourself a few jars of breakfast smoothies to go with it. Mason jars work great for this.

Just be smart about it. I have salmon prepped for this week that I have vacuum sealed in the freezer. Day of, I toss in the sous vide and pan fry to finish it off before lunch.
