I don't often do broccoli on its own, but I do like to include it in a ragout. Starts with onion, garlic, and italian sausage in some olive oil. Season with some salt, pepper, and chili flakes. Cut broccoli into chunks (stems included! peel them if needed), the water from 2 cans of beans, and the water from a can of chopped clams + clam juice. Simmer until tender, then add the canned beans and clams and heat through.

Spoon into bowls, drizzle with olive oil, and grate on some fresh parmesan. With the clam juice and the spice, the florets become absolute flavor sponges. It's the kind of dish I make when someone wants to understand umami.
