Caraway seeds are often used in rye bread, they have a very distinctive flavor that is a nice flavor boost in kraut. I'll often toast the seeds in the pan first without oil, then set them aside and start sauteeing my onions. And since I'm simmering it for a while, the seeds soften and offer a nice little bite without being tough or fibrous. I only started using them a couple of years ago, but now I don't make kraut and sausage over potatoes without them.

And bonus points if you pull your sausages early and fry them a little.
