My ex and I went to Sweden to visit her family and they asked me to try it. I knew exactly what it was but don't mind trying new things at least once.

I did not have a good time with that, but apparently even Swedes know how horrible it is so they were more compassionate than "haha we tricked the silly American."

He does say that if you follow the special preparation steps it's... "not that bad".

Not many native Swedes sit there and go "Oh I love surströmming" though, but I can only speak for what my best friend has told me through the years.
By this point, it's purely a cultural thing, and understanding how to eat a cultural dish isn't that weird. Hence why OP even made said thread and mentioned that it's "that time of year" in the first place.

In South East Asia they eat insects and other shit because of past famine as a result of wars and other stuff. They developed a taste and knowledge that these inexpensive food sources are available, so why bother stopping?

For most of Scandinavia yes, it was about survival. "Lutefisk" is a fish dish made by pickling fish in fucking *lye*.
They also eat sharks, also cultural, given that winter months were harsh as fuck and food was scarce.

most of our classical dishes stem from households being really poor and using what they've got to either make something now or preserve it for later. my mom comes from the area that is generally known for eating surströmming and my mom and dad generally eats it once a year. i remember when i was a kid there was at least one time every summer where that smell filled the local area.
