I made a post on EXACTLY this problem. This picture is why I hate barbecue. You go and get this really good meat, and your sides are a slice of wonder bread and some canned beans and shit from a jar. Totally ruins it for me.

It's because the meat is the star. The bread should be soft and absorbant, it's for sopping up juices. The beans are often great at BBQ joints and are made from smoked meat drippings. Pickles and onions help with richness fatigue and cut through the fat, nice texture change.

As for other actually shitty canned sides, I won't defend those. I've had amazing collard greens and green beans at BBQ places, too. Potato salad always sucks.
