It's really not, it's underripe, boiled and then marinated in soy sauce, mirin and wakame. There's still an aftertaste though so tinkering will have to be done.

Tried making my own tomato sauce from tomatoes I grew in my garden. For a first try/first batch it went ok.
I'll have about a gallon and a half by the time im done, plus a bunch of tomato soup stock I can freeze to make beef and vegetable soup this winter

Thanks, I found an even better method for crust (didn't take a picture) but you can also after taking it out of the pan and flipping to egg wash the crust and broil for just a minute and it comes out even better. Also recommend to try using piloncillo sugar it makes a big difference.

The wakame seaweed in the marinade actually does wonders in making it fishier. I'm undergoing another experiment by having the sliced pieces of watermelon marinate another day. Katsuobushi would be interesting but ultimately go against a vegetarian dish. I actually thought about it still. I could look into a kombu dashi based marinade. Thank you for your input anon.
