Good points. I never really thought about it but he is very positive, even when he doesn't like something. It's very relaxing to just hear facts about the food instead of opinions. And when he does share opinions they're usually framed as improvements that could be made.

I'll use Chef John as an example. He's chill, positive, and NICE like Steve, but he does include little bits of his personality in his content. The way he talks is annoying and his puns are cringe but it's his genuine personality in the video and I like it.

Steve on the other hand seems to be actively trying to remove all personality from his content and be purely factual. I appreciate that too. This isn't a critique, just genuine curiosity. There are lots if MRE channels out there and 99% of them really suck, BECAUSE of the creator's personality.

Someone above said it well: he focuses on the content and not himself. I agree with this. I think this is a) why there's very little personality and b) why his content is so great.
