I’ve never had coffee before. I don’t know how to differentiate between “light roast” and “dark roast” coffee. Which is better?

light roast is less bitter, hence it is tastier. Dark roast is great too

dark roast--contrary to the popular belief--has less caffeine, tannins & a higher pH-level (less acidic) than light roast coffee, much easier on the digestive tract for folks who aren't accustomed to drinking it

I would go for light roast and transition slowly to dark. I can drink anywhere from light to black because I've learned to appreciate the flavor gradually. You'll notice it perk you up, but don't make it a daily thing. You'll start feeling groggy and it will become part of your poop schedule.
