Is there any way to undo overcooking ground meat in any way? Or at least temper it somehow?
I made burrito meat that was way too crispy and I need a fix for it

Add something to offset the crispy texture, like refried beans. It will still be a bit noticeable if you fucked up that bad but should help.

Yes. Add broth, tomato juice (or puree), or water. Canned bean juice would work. Bring to a simmer, cover, turn heat off. Let stand 10 minutes.
Not ideal, but... somewhat improved.

If you burned it, it's gone. No salvation. You might be able to scrape out some of the top bits in an emergency, but they'll only suck slightly less than the stuff stuck to the pan.
Brown is fine, blackened is charcoal.
