It's more of a regional dish than a national one, but Colombia is a diverse country so finding a truly national dish is impossible.

Ajiaco Santafereño. A thick chicken and potato soup with an ear of corn and guascas (an herb that apparently is called quickweed in English). After it's served you add a spoonful of cream and capers.

I never liked soups as a kid but never refused an ajiaco. It's pretty good.

I'd assume that a couscous tagine is more popular in other regions, but where I'm from people eat a lot of this dish:
You may know it as msemen, but I call it rghaif
Its usually eaten as a breakfast dish, with something sweet. It tastes better with mint tea on the side.
Whats particularly interesting is that it consists of one part plain flour to two parts semolina flour, the same flour used in couscous and most types of pasta
Without the semolina, it wont brown properly, and without the plain flour, it's too thick.
