I was making cured salmon lox but forgot to plastic wrap it. It's covered though, anybody know if it's fine or if I fucked up and made mustard gas? Google isn't helping.

This was my thought process. It smells fine but the pan I kept it in was rather juicy.

I redid the salt/sugar/lemon + orange peel mixture, reapplied with rosemary instead of dill against the skin and flesh of the fish then wrapped it. Will report back later on how it came out.
