There's no science to what he is doing. Beating the shit out of eggs doesn't make them better, nor does being on really high heat and then taking it off the burner because the burner is too high.

Remember Ramsay is an idiot. Even Aron Sanchez is looking shell shocked because it is such poor technique. You'd have to understand chemistry to know that.

Ramsay did a bad video years ago with this made up technique no one else does. It should be eggs, not sour creme fraiche eggs.
