I'm going to university next month and want to save as much money as possible by cooking my own meals. What are some actually decent meals that can be made cheap with only a microwave and an instapot?

buy:
chicken thigh - should be ~$2.50/lb
big bag of white rice
bag/cans of black beans
pork hocks - should be extremely cheap
badia/goya sazon seasoning mix
frozen spinach bricks

season the chicken with sazon, cook on it's own in instapot and set aside
cook some rice, set aside
put beans and pork in instapot and add some salt, pepper, bay leaf, oregano, cumin, cayenne, garlic, onion. Or if you lack all that just add more sazon. Let slow cook for a few hours till the pork falls apart. set aside
microwave the spinach, greens are the minimum vegetable you need for vitamins/minerals
so plate up some rice, chicken, and spinache and pour your bean stew over top. This is how all of latin america lives.

Steel oats. Buy a shitton of steel oats.
in the instapot, you can cook them at a 1:3 ratio (or adjust to your liking). Prep a big batch at the beginning of the week so you can heat them up in the morning throughout the week.

Steel oats are better than regular oats because they have a higher protein count per volume and are lower on the glycemic index, meaning you won't "sugar crash" after eating them. Also, many people don't know what they are/how to cook them, so they're super cheap. I would HIGHLY advise you work these into your diet.

You can make gumbo in a microwave. There are tons of videos and instructions on how to do the roux, it's my go to way of making it now. If you can get an 9 cup Pyrex measuring cup it will help for cooking in the microwave. A wooden spoon is also useful for not damaging the glass or thermal shocking it.

Make the roux, cook veg in hot roux, add carton of chicken stock, spices, then add your meat. If you're using chicken or sausage cut it into smallish pieces.


Caramel corn can be made in the microwave, get some paper bags from the grocery store to shake the popcorn with the caramel sauce.

Find a butcher close to campus. They usually offer cooked items like bbq chicken, ribs, chicken salad, ect. Go a couple of times a week. That will be better than any prepackaged microwave shit out there.
