I usually go at like 285-300 until it hits 165-170 internal then pull it wrap it in butcher paper then let it ride to 193-94 at like 265-275 then let it rest in a cooler for about an hour until it hits 203-205

Thats similar to what I did. 275 until it hit 160, wrapped in foil and cooked at 300 until 190 and let it rest for about an hour. I've got another brisket I'm going to cook later this week so I'll try it your way and see how it goes. Thanks!
