California burrito means that french fries are the base instead of rice or something and theres usually avocado sauce or gaucamole in it. A true california burrito usually has carne asada or mexican chorizo in it so it wouldn't be vegan. As for the fish taco I wouldn't look to arizona for that, the fish taco is more a baja/california staple. Other than that the menu looks good, I would definitely price differently though, you're trying to hit 30% so realistically your texas brisket is going to be 12-15 for about 8 oz, your burger probably 10, and the hot chicken around 12. Solid american menu, execution looks difficult and the pricing needs work if you're gonna hit par.

all-in-all this menu is all over the place and looking at the prices i'm assuming you're not using good ingredients. this stuff is really cheap for a main course. even the lowest quality cheese steaks that are considered cheap go for at least $10 - my point is you can probably at least add another 3 or 4 euros on all these mains. regardless i would try to lock in on a more specific region or type of food if you really want it refined and fucking delicious.
if you want to cover all your bases open a diner and do a big classic diner menu. everything is reasonably priced and can be really good if you know what you're doing and have competent chefs in the back. really few restaurants in america have a menu this diverse where all the mains are up to par. the best american restaurants specialize in one thing
