How important is tradition in cooking? Do you like fusion foods? Do you prefer when a cuisine is cooked by locals who eat sleep and breathe the culture? or do you not care who's preparing your food?

Basically this, and fuck Italians. Nobody cares how your grandma makes anything and you're not interesting for going OH GOOSH OOF BAGOOL IF MY MA COULD SEE DIS OOF COULD YOU IMAGINE, 2 SHAKES OF SALT INSTEADDA ONE AND A SNEEZE OOF SHES ROLLIN IN HER GRAVE THIS WOULDN'T PASS FOR SHIT IN SICILY as if anyone gives a fuck. Doesn't help that each italian grandma has their own fucking particularism. Such rampant autism.

Traditional foods should be preserved as well as possible. Fusion foods are good. New foods are equally important as traditional food. Modifying a recipe does not destroy the original recipe.

If the quality is there what difference does it make? You've probably had tons of sushi prepared by Mexicans without knowing it. Most sushi places are run by Koreans anyway.

Tradition and authenticity is only important for non-white dishes. If a couple of white bitches in Portland start making burritos I'm going to riot and loot Nordstroms.

Yes, Italians are considered white so when Asians and blacks make that food it's considered revolutionary. If I ever see an Italian making chitlins, I'll riot, loot Nordstroms, IRLN.

That article is more about how weird it is that they got shut down than it is condemning them. Portlanders care a lot more about good food than they do SJW bullshit. One of the biggest restaurants in the city was literally started by a white guy who lived in Thailand for a decade and brought back a bunch of street food recipes.

The pov of the article is not relevant, the reason it was written is bc the cart was shut down because of the race of the vendors. It wasn't reopened at some later time, they were put out of business in Portland because it's racist to cook poc food. It's no different than hate speech and should be illegal.

It’s important to understand the foundations of any cuisine you work with. It’s important not to misrepresent food as authentic when it’s not. Above all it’s important to make your food delicious.
Just don’t call things what they aren’t and don’t slam people for trying to innovate.

The reason for traditionality in cooking is that the best recipes are traditional.

>> No.14546938

>>14546218
Tradition is important, but not king. Modifications to a recipe are fine. Fusion foods are very hit or miss; I lived in Portland where there's a fusion gastropub around each corner, and most of it was shit. It needs to make sense.
Yes. I care because usually if it's a different ethnicity cooking, they aren't as good as someone who is the same ethnicity as their food.

It’s important to me in the sense that the vast majority of the time, I think you should be able to pull off an “authentic” take on a dish that could conceivably be endorsed by a local to the home region before you fag it up. That BBC fried rice thing (aka pussy pass denied) cracked me up because that bitch broke rule #1, basically, be able to reasonably reproduce it via the rules or at least spirit of whoever invented it. Asians took it as a huge diss which is hilarious but also justified. Asians don’t give a single fuck about human rights or not having cameras with dystopian shit literally everywhere, or having trucks not btfo scooters on the reg, but some britmutt fucks up fried rice and get them pitchforks out. Just shows the importance of this immutable culinary law.
