That wasn't crisped, just browned on each side, a very common first step in making a chicken stew. It will render some of the fat and get a little "brown" flavor. It was still soft and floppy. Just try it both ways one day, and see for yourself. It improves the final stew's flavor and does a little bonus to the texture to the meat as well. The dark color you saw was just the red wine marinade staining the chicken.

I can understand a little annoyance in something deep fried, like buffalo wings, or orange chicken, that are then drenched in sauce

I can make the same looking thing in 30 seconds with a cast iron pan full of bacon fat.
Just scramble some eggs with butter cut into it.
Cook bacon.
Remove bacon.
Turn to high heat and wait till smoke.
