At what age did you realize that Ramen is just pretty good but other asian noodle dishes such as Laksa, bun bo hue and khao soi etc etc are superior?

Khao soi is pretty great. For me, bo kho is the best viet soup, but I also enjoy bun bo hue and banh canh cua even moreso.

Koreans make some nice seafood soups, too.

I agree. Japanese is very much overrated. Don't get me wrong, ramen is good. Just not $12 great when you get one piece of meat and wood ear mushrooms. I look at OP and I think THAT looks like it should cost $12. Curry, various toppings, etc. etc. Do Japanese think only their broth takes hours to make or something?

Bun bo hue is shit at 99% of locations on Earth and transcendent in the 1% of cases where someone is actually from Hue or Da Nang or somewhere nearby. Really, Laksa is in danger of the same reputation, as literally-who Chinese places try to offer it but nobody there even likes it or understands the flavors, which are great when done right but 99% shit.

I am still getting used with the coconut shrimp thing with Laksa but I do find it quite a good experience eating. Far more unique than the chicken/pork + salt/soy sauce based broths of most ramens if you ask me.

You do realize tonkotsu isn't the only type of ramen? Pho is different from bbh, as shoyu is different from tori paitan or gyokai tonkotsu, as Thai boat noodles is different from yen ta fo. They all taste pretty fucking good. If you are complaining about the price, stop being a pajeet. I don't expect to pay the same for a bowl of tsukemen from Tomita as I do for kuay jab in Bangkok Chinatown.

All the Japanese restaurants around here are a class above other Asian restaurants (except maybe Korean).
So ramen does end up being the superior noodle dish by a fair margin.
I would be interested to see if the other dishes could be better if the same amount of money was spent on ingredients, but (without travelling) that's probably a generation away.
Also who are we kidding, ramen broth is top tier. You're not beating that complexity with coconut milk or whatever.
