Japan is the country with the most Michelin stars in the world, and deservedly so.

Kaiseki and Shojin ryori have preserved traditions from the Kamakura period and from Chinese court cuisine (that have died out in China). This is similar to how the Japanese have preserved the extinct tradition of Yayue 雅樂 Chinese court music in their form of Gagaku. Kaiseki has up to 14 courses, each with a specified and formalised concept behind it, such as Takiawase, separately simmered pieces of highest quality vegetables meant to bring forward the essence of their taste. Japanese food also places huge importance on seasonality of food and elevates this to a spiritual and poetic level.

As a result of the (granted, somewhat misanthropic and autistic) Japanese working culture Japanese food utilises presentation, skills and techniques that often go beyond even a lot of haute cuisine. Think of the guy at Jiros place that literally had to make thousands of omelettes before he could start. Japanese food also values individual ingredients and subtlety, it is delicious not just by virtue of adding large amounts of fat, sugar and spices, as many other asian cuisines. The minimalism of traditional Japanese food is timeless. In a way, Japanese food combines elements of French and Italian cuisine: elaborate, formally codified techniques and preparations as in French food, and a focus on making few, high quality ingredients shine, like in Italian cuisine. Its a perfect unity of simplicity and technique.

Inb4 focusing only on high end food. In Japan, again similar to Italy, it is difficult to find any bad food. And even a random Ramen or snack and beer place will have autistically good plating and presentation.

I prefer simple Showa or pre-Showa-era working-class foods like cold Soba, Somen, Nikujaga, Gyudon, Tamamo Kake Gohan. They tend to be healthy and cheap, so I can invest all the money in the freshness of the ingredients and only a few items like Soba-Sauce.

i've been twice but i know that there's a completely different experience in tohoku and shikoku and kyushu and hokkaido (outside of sapporo)

I love katsu everything, the grilled fish you can get at some random fish place (esp. fatty salmon), love also don everything (stuff on rice), and the shitty fast food places like Matsyua, Yoshinoya and CoCo Curry serve exactly the stuff you need on a Saturday night with beer and TV. Prices are outrageously cheap at restaurants and bargain lunch hour prices at top of the line restaurants in Ginza are illegally cheap. Ah and Jap pizza is great too. I hate their novelty foods.

Fucking love it. Some of the best food I've ever had was at the old Tokyo fish market.
But honestly a good bowl of spicy miso ramen is top tier for me, as well as eel sushi/nagiri/sashimi.

Top favorite is Thai tho. Idk what happened, some one got overwhelmed assigning souls to babies with this population boom cause I fucking missed the boat on being japanese/SE asian. Last step is being an anime fag and then I become full weeb... So far I haven't seen one I really care about. Except Shin Chan. Shin Chan is love, Shin Chan is life.
