I, infact, did. Made a batch of beet burgers. They were terrible. No matter how much binder you add to plant based burgers they do not hold together like meat burgers. Flavor is okay I guess. I'd be better off turning the bread into croutons and making a salad with the ingredients though.

That's not true, there's all kinds of spices, herbs and acids that can make even vegan food taste great. It's a little more tedious for sure, but it doesn't have to be bland and nasty. Not to mention coconut milk, olive oil and nuts are also delicious and fatty and can be used in vegan food.
I do feel like vegan thai curries can be a little lacking a lot of the time, due to no shrimp paste or fish sauce but they are still delicious. Just maybe max out at 9/10 for a great one rather than 10/10.
