Lox is always cured / brined, and is usually "cold smoked" (never actually reaches cooking temperatures). Smoked salmon can refer to any smoked salmon preparation, but in this context refers to hot smoked, where the salmon reaches cooking temperatures. A good hot smoked salmon will separate easily into layers, vs. lox which is always very well connected. An overdone hot smoked salmon will be a dry mush, and it'll fall apart everywhere, rather than respecting the grain of the flesh. There's also salmon candy and salmon jerky, which are intentionally dried out much more than lox or normal smoked salmon.

I can respect this too, but if you aren't doing pickled red onion you should consider some lemon juice. The extra sour really pulls it all together. Also if you're going for dill, consider gravlax.
