A delicious pasta dish using cherries. Can it be done? How would you put it together?

I personally believe it could be possible, but I am an inexperienced cook. You cook tomato sauce for a long time to develop sweetness. Cherries already have this

Good cherrys are pretty expensive so it seems like a waste, maybe just do a taste test, one with some chicken another with a steak, maybe one with pork then compare and contrast.
