Take a head or two of garlic, skin all the cloves, put in an oven safe vessel, drizzle olive oil on and coat, put in oven at 355 for 45 to 60 minutes or until golden coloured, mash up and stir with a fork while still hot (add salt and herbs in this step if desired), and store in a baggie or small container in your fridge for up to a week. It roasted garlic, different/sweeter taste.

I cut the top off a head of garlic, so that each clove has the tip cut off, pour olive oil on, wrap in foil, and bake whole. You can squeeze the garlic out of the cloves like little ketchup packets. Great on pizza, in baked bread, eggs..

Have you ever heard of the Legendary "Elephant Garlic"? If you cut the tops off of them, you can grill them along with your steaks and when they're done, you can stick a butter knife into them and the garlic bulbs are so tender that they spread like butter. Perfect for warm buttered bread. Great with steaks and pastas. Elephant garlic is supreme garlic. It's huge and expensive, but it's one of those things ANY garlic lover should try once in their life.

Get some pork belly and a lot of spring onion.
Roast pork belly int he pan, then add in whole pieces of garlic and roast them as well.
Add 1 tbsp of sugar, then 3 tbsp of soy sauce in from the edges and throw in large chopped spring onions (a lot). when it is almost cooked add in 2 tbsp of rough chilli powder and 1/3rd cup of water to be able to mix it properly. at the end 1/2 tbsp sesame oil. Serve with rice or eat it in lettuce leaves like small packages with this as filling.
The garlic becomes sweet when roasted and is perfect with spicy meat, the spring onion serves a similar taste it evens out the spiciness. This way you can eat about half a clove of garlic in one sitting.
