The reason why Japanese cuisine has taken a different path from Chinese cuisine is due to the abundance of water resources and seafood
So I was able to cook without having to use chili and garlic to reduce the smell of water.
And the Japanese demanded that the quality of the ingredients themselves be improved.
On the other hand, the country's treatment of spices and herbs is inferior to that of other countries
Chinese and Indian restaurants in Japan tend to moderate the amount of spices to suit Japanese tastes.

Like the only region in Japan that eats garlic regularly is the eastern coastal part of Shikoku and it's because of kidnapped Korean farmers, scholars, and potters in the late 16th century who settled there.
