i've been mostly vegan for about 10 years although i'll occasionally eat dairy and fish if it's in the house already

the secret is learning how to cook and substituting things. eating a good vegan dish is all substituion, and researching native cuisines of countries and finding incidentally vegan dishes

i most often eat japanese food. for example i'll make vegetable tempura, and a miso ramen with kombu dash i stock, fried tofu, sesame oil for heartiness, beansprouts, corn, laver

also find the right meat substitutes. i'll make beyond meat burgers with daiya cheddar slices, tomato onion lettuce ketchup salt pepper and pickles

the only things you just can't really replicate are chicken wings and steak and shit like that, although in some brooklyn pizza place i did have a disturbingly realistic chicken drumstick with a fake bone and all, it was definitely some chinese factory shit but was amazing in terms of taste and texture

Plenty and Plenty More by Yottam Ottolenghi. Since he himself is actually NOT a vegan or vegetarian, and thus knows how to cook, his recipes are a lot better than when you get recipes from an actual vegan, who hasn't had proper food in some time.

Same goes for Kenji, so a lot of the vegan recipes on Serious Eats are pretty decent.

Generally focus more on dishes/cuisines that are incidentally already vegan, instead of "veganifying" meat dishes. Ratatouille and Dal Bhat are among my favourite foods, even though they are vegan.

I get where you're coming from, but if you do more unbiased research into our recent climate crisis it more has to do with industrialization than with animal consumption. I would say that mining actually is probably whats causing global warming, since the these oils that formed from years of the accumulation of dead animals, their feces, and plants over millions of years did change our atmosphere over time. I mean, for a long time in Earths early life, the air was toxic.
Not to mention the mining for these materials causes massive sinkholes and destruction to eco systems (this includes animal suffering, like oil spills killing massive amounts of sea life, and certain underwater mining techniques causing animals to become confused and sometimes end up killing themselves in the process)

ALL industrial ag is problematic for animal welfare and the environment. I would say rather than turning to veganisim as a solution you should look into self sufficiency. If you have land you should utilize it. A front lawn or backyard can grow a good number of crops and you can keep a couple chickens to eat weeds, garden pests, and kitchen scraps. If you have more space you can keep larger animals.

Maybe in cities where human livestock to the mega rich have no access to land and produce 0% of their own food/raw material

But everywhere else in the world is going to use whatever natural resources they can to survive.
I do like to hope that in the future factory "farming" will become a thing of the past, but as long as there are consumer urban faggots there will always be a demand for commodification of living beings.

It's a shame too. A well raised animal is so dramatically different in not only satiety but in taste it's ridiculous. I had to slaughter a severely genetically deformed duck the other day, and even though he was maybe 1/4 the size of your typical broiler hen and severely fucked up, he has lasted me 2 days of eating him and literally no other meat (and keep in mind I have also shared him with others as well). And I am someone who can eat an entire rotisserie chicken and still be hungry.

Just giving him access to pasture, sunlight, and forage, allowing him to roam (when he still could walk) and supplement his fermented organic feed with bugs and grasses as well as excess from my garden made him dramatically different from a CAFO chicken who only lives to get as big as possible as quickly as possible.

Keep in mind this duck was basically euthanized as he was in so much pain and his life was so awful it would have been cruel to keep him alive any longer. The other ducks are in wonderful health and about 2 times larger than he was, he was just handed a bad genetic card. This even happens to humans.

I prioritize having as much control over what I put in my body as humanly possible. I couldn't do that on a vegan diet. Having plants, fungi, soil, and animals that are raised by my personal code of ethics and the blood involved in stewardship on my hands is much more rewarding and meaningful than buying something shrink wrapped in mystery from a supermarket.
