For backpacking any kind of meat red sauce pasta rehydrates pretty well. Lasagna, spaghetti, chili mac...etc all taste pretty similar but good.

The chili mac will balloon tents with farts so be warned

Hashbrowns potatoes is a pretty good all around meal
Pizza mre -entree is pretty good, lackluster sides.
I don't hate the asian style beef strips like most people

veggie crumbles, asian style beef, tortellini, and any patty meal are what's usually left in the box if you're late for chow

It has been almost a decade since I was in the military but my favorite MREs were the chicken fajita, tuna, and pork rib.

Also vegetable crackers with japaleno cheese is a top tier snack. Seriously better than any snack I could get in the civilian world, but i have never tried to replicate the taste.

Because it's shelf stable and can last for years. You only eat it when real food isn't available. Outside of the military it's a fun novelty and until recently they were cheap to buy surplus. Used to be able to get a case of 12 for like $70 or a double case for less than $120.

These were so great. The cappuccino that came with it definitely fit the meal to my surprise. It was always my go to when I had the chance to dig for MRE's. I think it came with pound cake too, didn't it?
