90 day isn't a level i'd suggest for a first timer.

30-45 day is the most i'd go for a first time dry age eater.

60-90 day it gets pretty funky, which tastes fantastic, but it's a bit of an acquired taste to the funk. Beyond 90 days it gets VERY funky and someone who isn't used to dry aged beef would likely have trouble even eating it.
