It uses lots of fermented seafood products, which can be off putting to beginners, but it's not terribly different than the countries around it. The president of Myanmar's brother lives in my old neighborhood and my mom is really good friends with his wife. She has cooked for me more times than I can count.

China and Korea.
So much good stuff out of both countries.

I love korean blood sausage and their vegetable bundles served with that tart sauce thing.

I love Chinese offal food, and they make pretty good noodles, spit roasts and dumplings. There are so many different cuisines.

For both countries the exported restaurant style shit is usually boring and sometimes awful.

For japan, I love plenty of Japanese food, but overall I think it's overrated. Some of the food people love the shit out of are just worse versions of other countries dishes. Other dishes are solid.

Mongolia - never tried anything Mongolian except the, probably not very representable, Mongolian bbq which is usually a 1+1=1 kind of experience.

Honestly some of the worst food I've ever had in my life.

If i never saw fucking chilis and cheese again it would be too soon jesus christ.

As a hyper buddhist country they banned the killing of any animal, so all their meat is butchers across the border in india, but they don't have proper infrastructure or refrigeration so they have to dry the meat to jerky for distribution so these people eat re-hydrated jerky like that,s normal, that and fucking canned meat.

Same note: little refrigeration means in winter most of the vegetables are canned or re-hydrated as well these people never fucking figured out pickles.

also red rice isn't that good.

This dude is pretty spot on, but chinese cuisine could be broken down more. like sichuan and hunan foods are over rated. Also the CCP did a fucking number on that country's culture and by extension their cuisine, so much was fucking lost and so much of what we have is based on weird hick culture and scam artists claiming to make a 10,000 year old recipe from the court of the yellow emperor himself. Yeah but every culture at one point lived like that, it's just sort of the pre modern mindset where resources are scarce enough that the definition of class was just "more". Once a culture has enough resources that even the middle class can have "more" the idea of having "more" loses value, just having a lot is no longer special and people start to focus on quality over quantity resulting in a more aesthetic culture.

Pre Mao there was a budding class of educated and modern chinese people who wanted to bring their country into the modern world without a hard reset. Honestly I don't know if they would have been able to pull off the kind of amazing reform Japan had in the 20th century, but I can't help but think it would have been better than what we ended up with in our timeline.
